Stuffed Haddock - Back to Recipe Index

Ingredients

4-5 lb. Whole Haddock
1-2 tsp. salt
Stuffing: 1/2 c. margarine
3/4 c. celery chopped
1/4 c. onion chopped
3 c. cracker crumbs
2 tbsp. lemon juice
1 tsp. parsely flakes
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. hot water
1 tbsp. margarine melted


Directions

Rub inside cavity of fish with 1-2 tsp. salt. Combine first 8 ingredients of stuffing. Toss to mix. Add 1/4 c. hot water and mix. Stuff fish and skewer together. Place fish on greased foil wrap and baste with melted margarine. Seal fish in foil. Place on cookie sheet. Bake in 400 F oven for 10 minutes per inch of fish thickness. This is also great on the barbeque.
