Cook celery, carrot and onion in margarine till tender. Add flour and stir, cooking for 1 minute. Gradually add milk and clam juice, stirring constantly. Cook till thickened. Add clams and potatoes. Remove from heat. Add thyme and salt and pepper to taste. Pour mixture into baking dish. Roll out pastry and cover pie. Brush pastry with a little milk. Bake at 450 F for 10 minutes. Reduce heat to 375 F and cook for an additional 15 minutes. |
