Acadian Fish Dinner - Back to Recipe Index

Ingredients

1 Lb. Fillets
1/4 c. Margarine
1 c. thinly sliced onions
3 c. thinly sliced potatoes
1 1/4 c. thinly sliced carrots
1 tbsp. flour
1 tsp. salt
3/4 c. milk
1 tbsp. cooking oil


Directions

Preheat oven to 350 F. Melt margarine in large saucepan and saute onions until tender. Add potatoes and carrots and stir fry for 5 mins., stirring constantly. Sprinkle with flour and salt, stir to coat well. Add milk and heat until bubbly. Spoon into a 2 quart casserole dish. Cover. Bake 30 minutes. Uncover. Arrange fillets on potatoes. Brush fillets with oil. Cover and bake an additional 25-30 minutes.
